Lemon Tortellini with Broccoli, Mushrooms & Creamy Goat Cheese

1 (10 oz) pkg refrigerated fresh tortellini
2 Tbs unsalted butter
1 cup mushrooms, sliced
3 cloves garlic, sliced
1 cup fresh broccoli crowns, stems trimmed short
1/4 tsp salt
1/4 cup white wine
1 lemon, juice and zest
1/2 cup goat cheese crumbles
Directions
- In a large pot of boiling salted water, cook pasta according to package instructions. Reserve 1 cup of pasta water. In a large sauté pan, melt butter. Add mushrooms. Sauté over medium heat for 4 to 6 minutes until golden-brown. Add garlic. Sauté for 1 more minute. Add broccoli, salt, wine, lemon juice and lemon zest. Stir to combine. Bring wine to a simmer. Add tortellini, goat cheese and 1/2 cup pasta water. Gently stir to coat the pasta. If sauce appears too thick, add more pasta water. Turn off the heat when sauce reaches desired consistency.
